Our Head Chef Manny Bannon began his career as a Commis chef at the prestigious Westcourt Hotel, Drogheda in the Republic of Ireland. He then left Ireland to work at the Farmers Lodge Hotel, Stow-on-the-Wold, Cotswolds before heading to Manchester to work for Copthorne Hotels Salford as chef de partie. After two years he went to work for Gary Rhodes at Trafford Park, he then went on to become Sous chef then Head chef at Hurricane bar and grill Manchester, before taking the position of Head chef here at the Lord Clyde in Kerridge.

'My main aim for the Lord Clyde is to gain not just a reputation for good quality fresh food, but equally as important I want our customers to recognise that a lot of our produce is locally sourced. I think that it is important that pubs and restaurants should be there to support and promote local farmers and their produce. When you come to the Lord Clyde please don't hesitate to ask me any questions about the food or where it originates from.

It is a nice feeling when you're sitting eating the best roast beef you have ever tasted, that it only comes from five or six fields away.'
